{ SUMMER RECIPE :: Pasta Caprese }

Yup, another recipe! Who am I anyway? Well, this recipe was just too good not to share. This delicious dish comes from my friend Lindsay. She's a vegetarian and if I can say one thing about vegetarians, it's that they know how to be make the BEST pasta dishes, hands down!  So take my word for it and try this salad!

INGREDIENTS:
5 fresh tomatoes, diced
1 can of diced tomatoes
1/3 cup extra-virgin olive oil
1- 2 Tbsp balsamic vinegar
2 cloves mashed garlic
1 Tbsp sliced sun-dried tomatoes
Salt and pepper to taste
1 lb. your favorite pasta
1/2 lb. fresh mozzarella cheese packed in water, cut into cubes
15 fresh basil leaves, finely shredded

DIRECTIONS: Cut the tomatoes into a small dice. Drain them in a colander. In a large bowl, combine the drained tomatoes, olive oil, balsamic vinegar, sun-dried tomatoes, and garlic. Season to taste. Let sit for 10 minutes to marry the flavors. Cook the pasta right before you serve it. Add the pasta, cheese and basil to the tomato mixture and toss gently. Add salt and pepper to taste and enjoy!!!

{ Must-Try-Recipe :: Lemon Caper Salmon }

If you're a fan of fish, like Matt and me, you're going to love this light, fresh, and flavorful dish! It's seriously so good - and easy! Remember, I'm the girl that only cooks with 10 ingredients or less, and I must know the name of all of them! So if you're looking for something new and delicious to bring to the table, this is it!

INGREDIENTS:
(4) 6 oz Salmon Fillets
1/4 Cup of Lemon Juice
4 tsp of Capers
1/4 Cup of White or Marsala Wine
1/2 tsp of Kosher Salt
1/2 tsp fresh Ground Pepper
2 Lemons-sliced into 8 slices
1 Tbsp of finely diced Rosemary
1/4 Cup Extra Virgin Olive Oil

DIRECTIONS: Preheat oven to 400°. Place Salmon fillets in dish with skin down. Pour over the fillets your lemon juice, olive oil, and wine. Sprinkle over them evenly your rosemary, salt, and pepper. Place 2 slices of lemons on top of each fillet. Sprinkle your capers over top the fillets. Bake for 15-20 minutes. Serve.

{ Baby Laidlaw :: 14 weeks }

Finally! I'm into my 2nd trimester and feeling so much better! I feel like I had to take a break from life for the past couple months just to cope with the nausea. But my energy is back on the rise and I'm finally starting to eat most of my favorite foods again, minus chicken. Some days just the thought of chicken makes me sick! Weird, I know.

For my 13 week ultrasound I asked Matt if he'd like to come along to see what this baby business was all about. I could tell he wasn't super impressed with the "black blob on the screen" as he expressed it (boys are so funny!), but I was in awe when the doctor showed us the beating heart. It was so cool! You could see it's little heart muscle pumping and pulsing. I loved every minute of it!

After we saw the heart the doctor was able to show us the baby's spine, and even a glimpse of the little hands and feet. In this ultrasound picture it kind of looks to me like the baby's hand is up by it's face, maybe even sucking it's little thumb!

Oh I'm just so excited to meet this little baby of ours. At our next ultrasound in August we find out the baby's sex. Now that's going to be exciting!

{ Future Beach Babies }

I was pretty nervous about showing off my ever-growing belly at our family's beach trip to Oceanside this last weekend. Luckily, everyone thought I looked cute, not fat! Or at least that's what they told me! Haha.

And did you know my cute sister-in-law is pregnant too? She's the tinniest thing ever and is due exactly one month after me on February 15th! We're so excited and are really hoping they are the same sex so they can be best friends. Can't wait to find out what we're having!

{ Laidlaw Annual Beach Trip :: Oceanside, CA }

Coming home from an amazing vacation is never easy! As we walked through the door of our home it was certainly nice to be back but we were already missing all the fun in the sun. So while Matt decided to be productive and unpack his suitcase, I decided to put together this little video montage of our family vacation in Oceanside. I hope you enjoy watching it as much as we enjoyed making it. We already can't wait for next year!!!
